Cranberry-Orange Bread


Step 1

Preheat oven to 350°F (Gas Mark 4). Place walnuts on rimmed baking sheet and toast until lightly browned, about 5 minutes. Cool, then roughly chop and set aside.

Step 2

Lightly coat a 9x5-inch loaf pan with cooking spray. In a medium bowl, whisk together flour, baking powder, baking soda and salt.

Step 3

In a large bowl, whisk together Chobani and sugar. Whisk in egg and then orange juice. Use a wooden spoon to stir flour mixture into yogurt mixture, then stir in orange zest, cranberries and walnuts.

Step 4

Scrape batter into loaf pan and bake until cake is golden, resists light pressure and a cake tester inserted into center comes out clean, about 1 hour. Cool on wire rack for 10 minutes. Loosen edges and invert cake on to wire rack, then flip over right-side up and cool completely.
